Ingredients

  • 1 cup old-fashioned rolled oats
  • ½ cup all-natural peanut butter
  • 2 tablespoons chia seeds
  • 4 tablespoons cold water
  • ¼ cup unsweetened shredded coconut
  • ¼ cup unsweetened dried cranberries
  • ¼ cup unsweetened banana chips
  • ¼ cup unsweetened freeze-dried blueberries

    Prepare the chia mixture. In a small bowl, combine the chia seeds and cold water. Let the mixture sit for 10 minutes until thickened.

    Crush the banana chips. Place the banana chips in a plastic bag and crush them into small pieces using a rolling pin. Set aside.

    Mix the bar base. In a large bowl, combine the rolled oats, peanut butter, shredded coconut, dried cranberries, freeze-dried blueberries, and soaked chia mixture. Stir until everything is evenly mixed.

    Press into the pan. Line a 6×10-inch baking pan with parchment paper. Transfer the mixture to the pan and press it into an even layer. Sprinkle the crushed banana chips over the top. Cover with plastic wrap and press down firmly to help the topping adhere.
