Ingredients

  • Lemon Pound Cake
  • 3 cups granulated sugar
  • 1 stick (½ cup) butter, softened to room temperature
  • ½ cup Crisco shortening
  • 5 large eggs, room temperature
  • 3 cups all-purpose flour
  • ½ teaspoon salt
  • 1 cup buttermilk
  • ¼ cup sour cream
  • 2 tablespoons Happy Home Natural Lemon Flavor, preferred (or 2 teaspoons pure lemon extract if unavailable)
  • Lemon Icing
  • 1 pound powdered sugar, sifted
  • 1 stick (½ cup) butter, softened
  • ½ teaspoon salt
  • 3 tablespoons milk, plus more if needed
  • 2 tablespoons Happy Home Natural Lemon Flavor, preferred (or 2 teaspoons pure lemon extract if unavailable)

    Prepare the oven and pan. Preheat the oven to 325°F. Thoroughly grease and flour a 10-inch tube pan, making sure to coat the center tube and all sides of the pan.

    Cream the butter, shortening, and sugar. Using an electric mixer, beat the softened butter, Crisco shortening, and granulated sugar together until light and fluffy.

    Add the eggs. Add the eggs one at a time, beating well after each addition and scraping down the sides of the bowl as needed.

    Finish the cake batter. Whisk the flour and salt together in a separate bowl. Add the flour mixture to the creamed mixture alternately with the buttermilk, beginning and ending with the flour. Mix only until combined. Add the sour cream and Happy Home Natural Lemon Flavor last, then mix just until evenly incorporated.

    Bake and cool the cake. Spoon the batter evenly into the prepared tube pan and smooth the top. Bake for 1 hour 20 minutes, or until a wooden pick inserted near the center comes out clean. Cool the cake in the pan for 10–15 minutes, then carefully turn it onto a wire rack and allow it to cool completely.

    Make the lemon icing and finish the cake. Beat the softened butter, sifted powdered sugar, and salt together. Add the milk 1 tablespoon at a time until the icing is smooth and creamy, adding a little more milk if it is too stiff. Beat in the Happy Home Natural Lemon Flavor last. Spread or spoon the icing over the completely cooled cake and allow it to set before slicing.
