Aunt Joy's Pistachio Salad
A surprisingly delicious salad — sweet, light, and fruity, with marshmallows, pineapple, and pecans folded into creamy pistachio fluff.

Ingredients
- 1 large size Cool Whip
- 1 (20 oz.) can crushed pineapple
- 2 cups small marshmallows
- 1 small box instant pistachio pudding
- 1/2–1 cup chopped pecans (personal preference)
Instructions
1Mix the dry pistachio pudding with the crushed pineapple (juice and all) in a large bowl.
2Fold in the Cool Whip until the mixture is smooth and evenly pale green.
3Add the marshmallows and gently stir to distribute.
4Mix in the chopped pecans.
5Chill in the refrigerator until cold and ready to serve.
Tips & Variations
- For a tropical twist, stir in 1/4 to 1/2 cup shredded coconut.
- Add extra chopped pecans for more crunch.
- For a sweeter finish, top with a few extra marshmallows before serving.
- Serve well chilled for the freshest flavor and texture.
