Aunt Joy's Corn Casserole
A creamy, cheesy, sweet corn casserole that's easy to make and always a crowd favorite!

Ingredients
- 1 stick of butter (melted)
- 1 can of whole corn (drained)
- 1 can of cream style corn (drained)
- 8 oz. sour cream
- 2 eggs
- 1 cup cheddar cheese
- 1 8 oz. box Jiffy Corn Muffin Mix
Instructions
1In a large mixing bowl, combine all ingredients except 1/2 of the cheese (reserve for topping). Mix until well combined.
2Spray a 13x9 casserole dish with cooking spray.
3Spread the corn mixture evenly in the prepared dish.
4Top with 1/2 cup of cheese.
5Preheat oven to 350°F.
6Bake for 30–45 minutes, or until golden and set.
Tips & Variations
- Add chopped jalapeños for a little extra kick.
- Use pepper jack cheese for more flavor.
- Make it ahead! Assemble and refrigerate, then bake when ready.
- Leftovers reheat well in the microwave.
