Ingredients

  • 1 stick of butter (melted)
  • 1 can of whole corn (drained)
  • 1 can of cream style corn (drained)
  • 8 oz. sour cream
  • 2 eggs
  • 1 cup cheddar cheese
  • 1 8 oz. box Jiffy Corn Muffin Mix

Instructions

    In a large mixing bowl, combine all ingredients except 1/2 of the cheese (reserve for topping). Mix until well combined.

    Spray a 13x9 casserole dish with cooking spray.

    Spread the corn mixture evenly in the prepared dish.

    Top with 1/2 cup of cheese.

    Preheat oven to 350°F.

    Bake for 30–45 minutes, or until golden and set.

Tips & Variations

  • Add chopped jalapeños for a little extra kick.
  • Use pepper jack cheese for more flavor.
  • Make it ahead! Assemble and refrigerate, then bake when ready.
  • Leftovers reheat well in the microwave.
