Ham Fried Rice

Ingredients
- 4 cups cold cooked white jasmine rice
- 2 tbsp bacon grease or oil of your choice
- 3 eggs, beaten
- 1/4 cup low-sodium soy sauce
- 1 tbsp sesame oil
- 2 cups diced cooked ham
- 1 cup frozen corn
- 1/2 cup frozen peas
- 3 green onions, sliced thin
- 1/4–1/2 teaspoon freshly ground black pepper
- 1 tbsp butter
- Optional: kosher salt, only as needed
- Optional: 10 small button mushrooms, halved and sliced thin
Instructions
1Warm 1 tablespoon of bacon grease in a large skillet over medium heat, add the eggs, scramble until cooked, then remove to a plate.
2Add the remaining bacon grease to the skillet over medium-high heat, add the ham, and cook for about 3 minutes.
3Add the cold rice and cook for 1–2 minutes, then add the soy sauce and continue stirring. Add the corn as you cook.
4Add the peas, eggs, green onions, and pepper, then stir gently and cook another 3–4 minutes until everything is hot.
5Push the rice out of the center of the skillet, melt the butter in the middle, then stir it through the fried rice and season with salt only if needed.
Tips & Variations
- Make the rice a day or two ahead so it has time to dry out.
- Swap the ham for another leftover meat or leave it out entirely.
- Add other vegetables you have on hand for an easy clean-out-the-fridge version.
