Temp

Medium-high, then low simmer

Yield

72 servings

Ingredients

  • 2 1/4 cups brown sugar
  • 3/4 pound dried pickled jalapeños, drained
  • 1 1/2 tsp granulated garlic (not powder)
  • 1 1/2 tsp kosher salt
  • 3/4 tsp coarse ground pepper
  • 3 cups ketchup
  • 3 tbsp molasses
  • 1 1/2 tbsp Worcestershire sauce
  • 3/4 tsp liquid smoke

Instructions

  1. Step 1
    1

Combine the first five ingredients (brown sugar, jalapeños, granulated garlic, salt, and pepper) in a saucepan and mix well — no heat yet.

  2. Step 2
    2

Add the last four ingredients (ketchup, molasses, Worcestershire, and liquid smoke) and stir together.

  3. Step 3
    3

Turn the heat to about medium-high. From this point, stir continually.

  4. Step 4
    4

Bring the mixture to a boil.

  5. Step 5
    5

Once it starts to boil, turn the heat down to low and simmer for 15–20 minutes, whisking the whole time so the sugar doesn't burn. This lets some of the water evaporate and thickens the sauce.

  6. Step 6
    6

Remove from heat and let it sit for about 10 minutes to cool.

  7. Step 7
    7

Pour into bottles and let sit on the counter for a few hours to cool all the way off.

Tips & Variations

  • Great as a marinade or dipping sauce.
  • Try it on ribs, chicken, burgers, meatloaf, or to add flavor to beans and chili.
  • For a smoky boost, use hickory liquid smoke or smoked jalapeños.
